Homemade Fresh & Quick!

Ciao everyone!

This week, I’d like to share with you a little about how to create an incredible home-cooked Italian meal in minutes. Now, I know what you’re thinking, “Just grab a bottle of spaghetti sauce and plop it on pasta.” NO!!

This is an easy sauce for you to make for you and your family.

4-6 ripe tomatoes
1/2  of a white onion
3 cloves of garlic (Peeled) or to taste
7 fresh basil leaves
3-5 fresh oregano leaves
2 teaspoons of salt
1 teaspoon of black pepper
some good quality Parmesan
Extra virgin olive oil

Bring a pot of water to boil.  Place the tomatoes in it for a few seconds and then remove them.  The skin of the tomatoes will be easily removed after this.  Remove the skins.  Place the rinsed basil and oregano along with the cloves of garlic and tomatoes in a blender, this will release the oils of the herbs into the mixture.  Puree the contents.  Once the consistency is smooth pour contents into a pot with a little warmed olive oil.  Put a lid on it and let it simmer. I like to add some minced garlic and a little more chopped basil and oregano at first stirring, then salt and pepper a little later to layer the flavors. At last stirring (approx. 5 minutes before you remove from flame) add a 1/4 cup of good quality Parmesan and save the rest to top the finished dish. Let it simmer for 15-20 minutes allowing it to thicken.

Prepare your pasta to “al dente”.  If you don’t have time to make your pasta from scratch, it’s best to use a fresh (non-dried) pasta for best flavor and texture, and it cooks more quickly.

There you have it!  Simple, fresh and delicious!
